The Tin Building is Jean-Georges Vongerichten's flagship food hall at South Street Seaport, developed with the Howard Hughes Corporation. It is one of the most ambitious hospitality projects in New York City in a generation, and one of the largest single-venue bar and beverage builds Jason has done.

The problem

A multi-concept venue is not one bar program. It is several. Each concept has a different guest, a different check average, a different service tempo, and a different beverage identity. Building one program and stretching it across all of them produces a hall where every bar tastes the same and none of the concepts land. Building each program from scratch with no shared operating logic produces a hall that is impossible to staff and train.

The Tin Building needed multiple bar programs, each with its own point of view, on shared operating infrastructure that a single training team could actually deliver.

What Jason built

Separate cocktail concepts, one per bar, each engineered around its own menu identity while sharing the underlying spec discipline: build cards, batching standards, glassware and garnish logic, and service architecture. Every concept could be trained by the same training team and audited against the same standards, without any of the concepts feeling like they were built by the same room.

Why this matters

A venue at this scale, backed by an operator this well-known, is the highest-visibility environment a bar program can be judged in. The program has to hold up on the first day it opens to the public and every day after. It has to survive the reality of a multi-concept, high-volume, tourist-adjacent venue in Lower Manhattan. And it has to represent the reputations of Jean-Georges and Howard Hughes at the same time.

That is Launch45 at the highest end of the scale: full menu build, full specs, full training, delivered on a schedule the venue actually needed.
