The service decision

Start with when, not what.

An awards reception may move from a concentrated arrival window to a seated program, then open again after the show. VIP hospitality might need a quieter service style throughout. Map those transitions before deciding where the bars go or how many drinks belong on the menu.

I develop signature serves and zero-proof choices to fit the occasion, then connect the menu to the service plan. Tell us which moments are hosted, which are self-directed, and when beverage activity needs to recede. The team should support the room rather than compete with it.

  • Show cues. Identify arrival, seating, speeches, room changes, and closing. Agree who communicates changes to the beverage lead.
  • Access. Confirm credentials, loading windows, preparation areas, and routes for restocking. Keep guest circulation separate from service movement where the venue allows.
  • Guest care. Plan zero-proof choices and ingredient information. Agree how the team handles a dietary question or a request it cannot safely answer.
  • Discretion. Set expectations for staff conduct, devices, photography, and information shared in briefing. Only circulate guest details needed for service.

Working with your planner

A beverage team within the bigger team.

The scope can include creative concepts, menu development, batching, logistics coordination, talented bartenders, staff briefing, and onsite beverage production. Your planner, agency, or event producer retains the wider event. We coordinate with catering, venue staff, and the show team where service overlaps.

I direct creative development and oversight, with my onsite assignment agreed per scope. A core team, curated talent, and local partners support delivery. We identify who leads beverage service onsite and how that person receives and passes on a change.

I am NYC-based and available for international commissions. Suitable local partners, venue approval, and destination legal requirements determine the delivery arrangement. The proposal should make those responsibilities clear, including who controls lawful alcohol service.

Bring the running order.

A draft schedule is useful even when timings are not final. Add the destination, guest estimate, room layout, service expectations, and any existing catering or beverage agreements. Flag access restrictions and confidentiality requirements early so they become part of the plan.

Can you work with the venue's exclusive caterer?

Yes, where the venue and caterer approve the arrangement. We define the beverage work that is needed and avoid overlapping purchasing, staffing, or service responsibilities.

Can a reception and after-party share one beverage plan?

Yes. We plan each service window separately within the same scope, including stock movement, preparation, staffing, and the handoff between rooms. The venue and running order determine what is practical.

Do you support private events as well as awards?

Yes. Hosted dinners, celebrations, and private hospitality can use the same approach to creative drinks, attentive teams, and production planning. The scope follows the guest experience rather than the event label.
